White teas are the rarest and most delicate in the tea world. The leaves are picked entirely from the leaf buds that are covered by whitish hair. The new buds are picked before they open in early spring, then withered and dried at a low temperature.
The leaves are not rolled and only slightly oxidized. The result is a mild flavored, very pale brew with a natural subtle flavor. There is a slight sweetness and faint hint of grassy undertones
